No Bake Almond Butter and Oats Bars with Keto Pumpkin Mousse

“Back to basics” January is started.

This weekend, I have only 2 hours time to come up with a healthy recipe to enjoy as a snack during my coming week. This recipe is “healthy” only if you are me because it’s fat, sugar and carb loading. I and I say if you are me because I want to gain weight, in good time. Let’s dive into the recipes right away!


MAKES 1 Dozen bars

  • 1/2 cup white chocolate, chopped
  • 1 cup old fashioned oats
  • 2 tablespoon chia seed meal
  • 1 cup almond butter
  • 5 tablespoons pure maple syrup (7 if you like yours sweeter)
  • 1/4 teaspoon cinnamon 


Makes 4-8 servings

  • (15 oz can) pure pumpkin puree
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg and clove
  • 1/8 teaspoon ground cardamom
  • 1 teaspoon vanilla extract
  • 2 tablespoons honey or agave
  • 1 cup heavy cream, whipped with 3 tablespoons confectioner sugar
Having been around beautiful diamonds throughout last week, I was deeply inspired with the design of my whipped cream topping.
